Background
Olumayowa Andrew is a food scientist and researcher with expertise in food product development, food safety, and sustainable agri-food systems. She is currently a PhD researcher at Cranfield University, where her research focuses on sustainable mycotoxin management in the fonio and teff value chains to enhance food safety. Her work examines mycotoxin risks across post-harvest handling, storage, and processing stages, with a primary focus on Nigeria, while generating evidence-based solutions that are transferable to other countries with similar food systems.
Olumayowa holds an MSc degree in Future Food Sustainability, and her thesis focused on mitigating Aspergillus flavus, Aspergillus parasiticus, and aflatoxin contamination in maize and sorghum through the application of a food-grade preservative. This research strengthened her technical expertise in fungal control strategies, post-harvest loss reduction, and cereal safety, and laid the foundation for her current interest in managing food safety risks in underutilised and climate-resilient crops. She also holds a Bachelor’s degree in Food Science and Technology, which provided a strong foundation in food processing, quality assurance, and food safety management.
In addition to her academic work, Olumayowa has substantial professional experience as a Research and Development (R&D) expert in the food industry. She has worked in fast-paced manufacturing environments, contributing to new product development, process optimisation, quality assurance, and regulatory compliance. She is passionate about translating research into practical, scalable solutions that improve food safety, reduce losses, and support resilient food systems.
Her current project is sponsored by the Commonwealth Scholarship Commission and is supervised by Dr. Carla Cervini and Dr. Carol Verheecke-Vaessen.
